GrassHopper Kettle Island Chili

Ingredients

​

  • ¼ cup chili powder

  • 1 large onion chopped

  • 1 red pepper chopped

  • 1 green bell pepper chopped

  • 2-3 various green, yellow or orange small peppers chopped

  • 14.5 – 16 ounce cans of beans consisting of

  • Kidney Beans (2 cans)

  • Chick Peas

  • Black Beans

  • White Italian Beans

  • Black Eyed Peas

  • 1 Can chopped tomatoes with chilis

  • 1 26-28 ounce can whole Roma tomatoes with sauce

  • Salt and Pepper to Taste

  • Non Fat sour cream for topping

  • Non Fat shredded cheddar cheese for topping


Method

  • Chop the onions and the peppers and put in slow cooker

  • Add the beans

  • Add the tomatoes

  • Add the seasonings

  • Note:  If you like, you may want to add more chili powder for flavor

  • Let the chili cook on low heat for 5-6 hours

  • Serve in bowls by itself, or try serving it over a roasted potato or a bowl of macaroni noodles.

  • A drop of fat free sour cream on top with a sprinkle of no fat cheddar cheese is a great way to serve Island Chili.


Note:  If the chili is too thick with the beans, add a can of tomato sauce.  Add more seasoning if desired.
