GrassHopper Kettle Island Chili
Ingredients

¼ cup chili powder

1 large onion chopped
-
1 red pepper chopped
-
1 green bell pepper chopped
-
2-3 various green, yellow or orange small peppers chopped

14.5 – 16 ounce cans of beans consisting of
-
Kidney Beans (2 cans)
-
Chick Peas
-
Black Beans
-
White Italian Beans
-
Black Eyed Peas
-
1 Can chopped tomatoes with chilis
-
1 26-28 ounce can whole Roma tomatoes with sauce
-
Salt and Pepper to Taste
-
Non Fat sour cream for topping
-
Non Fat shredded cheddar cheese for topping
Method

Chop the onions and the peppers and put in slow cooker
-
Add the beans
-
Add the tomatoes
-
Add the seasonings
-
Note: If you like, you may want to add more chili powder for flavor
-
Let the chili cook on low heat for 5-6 hours
-
Serve in bowls by itself, or try serving it over a roasted potato or a bowl of macaroni noodles.

A drop of fat free sour cream on top with a sprinkle of no fat cheddar cheese is a great way to serve Island Chili.
Note: If the chili is too thick with the beans, add a can of tomato sauce. Add more seasoning if desired.
