Pasta with Bacon and Artichokes

I have always steamed artichokes, pulled the leaves off and dipped in sauce. This summer, it was time to venture away from steaming and try with some of my favorite pasta.
Ingredients
1/2 box dry shell pasta (regular or thin)
6 strips of turkey bacon
1/2 bag (5-8 ounces) of frozen artichoke hearts
2 tablespoons olive oil
2 cloves of elephant garlic
1/2 cup chopped fresh Parsley
1/2 cup grated Parmesan cheese
1 teaspoon pepper
1/4 teaspoon salt
Directions
Bring a pot of water to a boil and cook pasta until it is al dente.
Add oil to a deep sided skillet, and cook garlic and bacon.
Cook until bacon becomes lightly crisp.
Add the frozen artichokes to the skillet.
Season with salt and pepper.
Cook on low heat stiring often until artichokes begin to caramelize.
Add 1cup or so of pasta water and bring to a boil.
Simmer uncovered 10 -12minutes.
When pasta is al dente, dip from water and add to the sauce. Do not drain and rinse the pasta.
Add the chopped parsley and mix well to thoroughly incorporate the pasta.
Remove from heat, sprinkle with grated Parmesan.
Serve
